1. Ice cream
In the production of ice cream, adding the right amount of Concentrate Soya Lecithin Liquid, increased the smoothness of the product, and at the same time can prevent the product from "sand" phenomenon, reduce the amount of egg yolk to make the cream stable performance. The use of lecithin in chocolate ice cream is even more necessary.
2. Instant powder
At present, the market sold by instant milk powder, is a large diamond powder, dispersion and mixing ability is superior to ordinary milk, but around 30 ℃ in its dispersity is only 37%, the mixing performance decline. Powdered milk with 0.2% Food Grade Concentrate Soya Lecithin Liquid. Solubility was significantly increased and dispersion reached 97%.
At present, some large domestic milk powder manufacturers have added about 0.2% ~ 0.5% lecithin in their milk powder, which can be mixed with room temperature water for drinking.
3. Other applications
Lecithin is added to soy sauce, tomato sauce, fruit juices, sausages and beverages to add flavor.
